Common Lifeさん納品用のパウンドを作るため、

かぼちゃを蒸していて、ふと思った事。

「芋類のお菓子を作る時、

 必ず加熱してから使うのはなぜだろう。」

同じお野菜でも人参はすりおろしを使うのが一般的。

かぼちゃ、さつまいもは、

蒸したり、茹でたり、煮たりしてから使ったものしか見た事がないことが

不思議に思えました。

そこで実験。

すりおろしたかぼちゃを使ったクッキーにチャレンジ。

結果、

かぼちゃの香りはするけど、甘さが弱い。

気になって調べてみたら、

でんぷんは65~75度で分解され、糖質(マルトース)に変化するそう。

だから生のすりおろしで入れても、甘みが出てこなかったのね!

だからじゃがいものガレットはじゃがいもの甘さを感じにくいのか。

納得!

実験する前に調べれば早いけど、

体験したほうが自分の中にストンと落ちるので、

実験は大切なプロセスです。
